Keto Thai Peanut Sauce
Ingredients
- 1/2 cup unsweetened peanut butter.
- 3 TBSP coconut oil
- 1/2 cup chicken broth
- 1 1/2 tsp ground ginger spice
- 1 1/2 TBSP sriracha
- 1 tsp onion powder
- 1 can coconut milk
- 2 tsp salt, plus more to taste
- 1/2 TBSP yellow curry powder
- 2 TBSP Swerve brown sugar (keto-friendly sugar substitute)
- 2 TBSP chopped green onions for garnish
- Chopped nuts for garnish (I prefer macadamia)
- Cooked chicken or shrimp * optional *
Directions
- Combine all ingredients in a sauce pan a cook on medium-low heat, stirring occasionally until the coconut oil and peanut butter have melted and the sauce is smooth.
- To serve, add to zucchini noodles (or if you aren’t keto, serve with noodles or rice).
*Optional: add cooked chicken or shrimp
