Keto Thai Peanut Sauce

Ingredients

  • 1/2 cup unsweetened peanut butter.
  • 3 TBSP coconut oil
  • 1/2 cup chicken broth
  • 1 1/2 tsp ground ginger spice
  • 1 1/2 TBSP sriracha
  • 1 tsp onion powder
  • 1 can coconut milk
  • 2 tsp salt, plus more to taste
  • 1/2 TBSP yellow curry powder
  • 2 TBSP Swerve brown sugar (keto-friendly sugar substitute)
  • 2 TBSP chopped green onions for garnish
  • Chopped nuts for garnish (I prefer macadamia)
  • Cooked chicken or shrimp * optional *

Directions

  • Combine all ingredients in a sauce pan a cook on medium-low heat, stirring occasionally until the coconut oil and peanut butter have melted and the sauce is smooth.
  • To serve, add to zucchini noodles (or if you aren’t keto, serve with noodles or rice).

*Optional: add cooked chicken or shrimp
