Keto Cream Cheese Stuffed Mushrooms

Cream cheese makes my world go round lately. Tonight was a perfect night to eat these cream cheese stuffed mushrooms as a side dish to barbecued T-bone steaks. They were absolutely delicious! Enjoy!

Ingredients

  • 8 oz mushrooms
  • 1/2 small onion, chopped
  • 1 garlic clove, minced
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 6 oz cream cheese
  • 1 TBSP olive oil
  • Salt & Pepper to taste

Directions

  1. Heat oven to 350°F
  2. Remove stems from mushrooms. Save half of the stems and chop. Set aside.
  3. Heat olive oil in pan over medium high heat. Add onions and sauté for 3-4 minutes. Add minced garlic and sauté for another minute. Set aside.
  4. In a mixing bowl add mushroom stems, onion and garlic, cream cheese, garlic powder, onion powder, salt and pepper. Mix until we’ll blended.
  5. Using a small spoon, fill each stemless mushroom with cream cheese mixture.
  6. Place mushrooms on a baking sheet on either a silicone liner or parchment paper.
  7. Bake mushrooms at 350°F for 30-35 minutes. Remove and enjoy.
