As I continue on my new journey with the Ketogenic diet, I find that it’s easiest for me to stick to by keeping my meals simple. Tonight’s dinner was simple but delicious!
My hubby’s in charge of barbecuing the steaks that he seasoned with kosher salt, pepper, and dried parsley. We had Bacon Green Beans as a healthy keto side dish (let’s take a quick moment to celebrate the fact that the keto diet allows bacon! Seriously yum) and some Caramelized mushrooms.

To caramelize something, you need sugar. For this keto-friendly recipe I used sugar from red wine. No added sweet junk. Btw, red wine in moderation is allowed for keto.
As we finished our meal, we couldn’t get over the fact that the meal, and in particular the mushrooms, tasted better than eating at a fancy restaurant, and it was diet-friendly! I do believe that this recipe is also fine for anyone doing the Whole 30 diet. Just simple ingredients put together in a mouth-watering way.

Caramelized Mushrooms
Ingredients:
- 8 oz sliced mushrooms
- 2 tablespoons extra virgin olive oil
- 2 tablespoons butter
- 1/4 cup red wine
- 1/4 -1/2 teaspoon dried parsley
- Sprinkling of kosher salt and black pepper
Directions:
- Heat a frying pan on medium-high heat. Add olive oil and butter.
- Once butter is melted, add mushrooms and stir.
- Season mushrooms with salt, pepper, and parsley.
- Let cook, occasionally stirring, until oil and butter are absorbed.
- Add wine and stir in. Let cook for about five more minutes.
- Remove from heat and enjoy.
