I’ve been dabbling in the ketogenic diet this week and I decided it’s very doable if you have good food options to eat. This diet isn’t terrible at all. Hello cream cheese and ranch dressing and almond butter, I’ve missed you on my other low-fat diets! ❤️
This recipe was originally a soup but I’ve changed it into a bisque by replacing the milk with heavy whipping cream. Again, yum. The soup recipe was from Vitamix.com because you not only blend the ingredients, but also warm the soup up by blending it in the Vitamix for 5-6 minutes. In my version of the recipe though you can blend it and then warm it in a soup pot.

Keto-Friendly Broccoli Cheddar Bisque
Ingredients:
- 3 cups of broccoli, steamed
- 2 cups heavy cream
- 1 tablespoon chopped onion
- 1/2 tablespoon chicken bouillon
- 1 cup shredded cheddar cheese
Directions:
- Place all ingredients into a blender, blend until smooth.
- If using a Vitamix, continue blending for 5-6 minutes. If not using a Vitamix, pour blended ingredients into a soup pot and warm over stove on medium heat.
- Enjoy
