Over the past few days I’ve been experimenting with the Keto diet, where you eat mostly fat, some protein, and very few carbs. I wasn’t sure what to expect but after the first two days I was sold. I lost 4 pounds in two days. I’ve been on a weight loss plateau for months and have just reached a weight I haven’t been in years.
It’s low carb, and I knew that bread was out of the plan, but there’s something about a sandwich that I missed. Especially since I’m now not only allowed but encouraged to go crazy with the mayo.
This recipe comes from a podcast that I listened to earlier today. It’s from episode 1 of the podcast “Two Keto Dudes”. I thought I’d better write it down and give it a try. And now you can too! It’s simple and only has 3 ingredients, including cream cheese. Yes, cream cheese!!! (Hold for applause)
Here ya go~~~
Ingredients:
- 3 eggs
- 3 oz cream cheese
- Pinch of Cream of Tartar



Directions:
- Set oven to 300 degrees Fahrenheit.
- Separate the egg whites from the egg yolks. Set yolks aside.
- In a mixing bowl, place egg whites. Add a pinch of cream of tartar. Seriously, all you need is a pinch.
- Beat until stiff, 5-7 minutes.
- Carefully scrape out and set aside.
- Mix egg yolks and cream cheese and beat until well combined, about 3 or 4 minutes.
- Gently fold yolk combination into whites, trying to keep the foam consistency.
- On a greased cookie sheet divide into six dollops, slightly flatten to resemble bread thickness.
- Bake until golden brown, 20-30 minutes.
- Take out and let cool, store in fridge.
