Fall = pumpkin everything!!!
I grew up eating fresh pumpkin chip cookies that my wonderful mom would make for my siblings and me. This is a lightened up version of her recipe with several healthier swaps (aka no margarine!)
Ingredients:
- 1 cup sugar
- 1 cup brown sugar
- 1 cup olive oil
- 1 29 oz can pumpkin
- 2 eggs
- 4 cups golden wheat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 2 cups dark chocolate chips
- 1/4 tsp ground cloves
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- Preheat over to 375 degrees F
- In a large bowl cream together sugar, brown sugar, olive oil
- Add pumpkin and eggs to mixture and stir
- Sift together flour, baking soda, cinnamon, chocolate chips, cloves, nutmeg and ginger
- Mix all ingredients.
- With an ice cream scoop, scoop onto a coolie pan lined with a silpat or parchment paper.
- Bake for 15 minutes.
- Enjoy!
