Lightened-Up Pumpkin Chip Cookies

Fall = pumpkin everything!!! 

I grew up eating fresh pumpkin chip cookies that my wonderful mom would make for my siblings and me. This is a lightened up version of her recipe with several healthier swaps (aka no margarine!)

Ingredients:

  • 1 cup sugar 
  • 1 cup brown sugar
  • 1 cup olive oil
  • 1 29 oz can pumpkin
  • 2 eggs
  • 4 cups golden wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon 
  • 2 cups dark chocolate chips
  • 1/4 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger


Directions:

  1. Preheat over to 375 degrees F
  2. In a large bowl cream together sugar, brown sugar, olive oil
  3. Add pumpkin and eggs to mixture and stir
  4. Sift together flour, baking soda, cinnamon, chocolate chips, cloves, nutmeg and ginger
  5. Mix all ingredients.
  6. With an ice cream scoop, scoop onto a coolie pan lined with a silpat or parchment paper.
  7. Bake for 15 minutes.
  8. Enjoy!
