Bacon & Green Beans Side Dish Recipe

I’m currently doing the Whole 30 challenge to improve my overall health and kick my junk food cravings. I’m on Day 4. This health challenge includes eating real, whole foods like vegetables, meat, fruit, and healthy fats; and cutting out junk food, dairy, and grains. 

It’s only for 30 days, but as I’m usually a junk-food junkie, I’m really having to work hard to make this challenge not only beneficial but delicious.

Last night we had steak for dinner. It’s a fancy and fun way to eat meat during the Whole 30, and in life in general. 


We paired it with my Bacon & Green Beans recipe. Sooo good! The recipe was simple, delicious, and inspired by a side dish I’d had at a local restaurant The Montana Club. Restaurant ingredients are a mystery, but I recreated the concept with two ingredients plus salt and pepper. It’s now a family favorite!

Bacon & Green Beans Recipe

Ingredients:

  • 4strips of good quality bacon, cut into smallish cubes. I use Daily’s bacon.
  • 3 cups fresh green beans, cut into thirds
  • Salt and pepper to taste. About 1 tsp. Of each.

Directions:

  1. Heat skillet over stove on medium-high heat. 
  2. Add bacon and cook for 5-10 minutes, or until brown, stirring occasionally. Do not drain.
  3. Add green beans. 
  4. Season with salt and pepper.
  5. Turn stove to low heat.
  6. Stir all ingredients together. Stir in intervals for 5 minutes.
  7. Cover with lid or aluminum foil.
  8. Let simmer for 25 minutes.
  9. Remove from heat, stir, and serve.
